Banana Bread Troubleshooting

Diagnose texture, rise, color, and doneness problems by symptom.

Start with the symptom you can see

Dry, dense, gummy, sunken, rubbery, flat, stuck, or unevenly baked loaves have different causes. Match the guide to the clearest symptom rather than changing several ingredients at once.

Check the basics first

Confirm flour and banana weight, pan capacity, leavener freshness, oven temperature, and central doneness. Those checks explain more failed loaves than adding extra liquid or leavener at random.
